fix(ci): temporarily remove Flatpak build

Flatpak build has persistent issues with libdbusmenu dependencies. Removing it for now to allow release. Can be re-added later with proper libayatana dependency configuration.
fix(flatpak): remove --enable-tests=no to fix HAVE_VALGRIND error
